Heart Beet Veggie Burger with Quinoa and Vegetables Salad and Balsamic Dressing

 
Ingredients:
  • 1 Heart Beet Veggie Burger
  • 60g of white quinoa, uncooked
  • 120ml of water
  • 1 tablespoon of olive oil
  • 1/2 onion
  • 1/2 red pepper
  • 1/4 zucchini
  • 1/4 avocado

For the rustic sweet potato:

  • 1 large orange sweet potato, cut into sticks
  • 5 garlic cloves, not peeled
  • 1/2 teaspoon of dried parsley
  • 1/2 teaspoon of dried thyme
  • 1 tablespoon of olive oil
  • Black pepper q.s.
For the balsamic dressing:
  • 1 tablespoon of olive oil
  • 1 tablespoon of balsamic vinegar
  • 1/2 teaspoon of salt
  • Black pepper q.s.

          Instructions:

  1. Put the quinoa with the water in a pan and bring to heat. Cook on medium heat for 8 min. Once cooked, loosen it with a fork and reserve.
  2. Meanwhile, cut the vegetables into 5mm-slices and grill with a tablespoon of olive oil.
  3. In the same grill pan, cook the burger for 3 min on each side.
  4. In a glass or jar, prepare the sauce by mixing the olive oil, the balsamic vinegar, the salt and the black pepper.*
  5. Once ready, cut the vegetables into cubes and mix with the quinoa. Add the balsamic dressing and mix again.
  6. Finish the plate with the burger and the avocado.
  7. Devour!

* NOTE: you can prepare this dressing in large quantity and store in glass jar, in the fridge, for up to one month. It goes well with
any salad!
