Olove You Veggie Burger served on a plate with Roasted Sweet Potato and Vegan Mayo

 
Ingredients:
  • 1 Olove You Veggie Burger
  •  Canons q.s.

For the rustic sweet potato:

  • 1 large orange sweet potato, cut into sticks
  • 5 garlic cloves, not peeled
  • 1/2 teaspoon of dried parsley
  • 1/2 teaspoon of dried thyme
  • 1 tablespoon of olive oil
  • Black pepper q.s.
  • Salt q.s.
For the vegan mayo (1 medium jar):
  • 150ml of sunflower oil
  • 750ml of soy milk (without added sugar)
  • 3 tablespoons of lemon juice
  • 1 tablespoon of dijon mustard
  • 1 teaspoon of salt
  • 1/2 teaspoon of oregano
  • 2 garlic cloves

          Instructions:

  1. Start by preparing the mayo, adding the soy milk to a blender. Process, while gradually adding the sunflower oil.
  2. Next, add the lemon juice, garlic, mustard, salt and oregano.
  3. Process again (at this point the mayo emulsifies and acquires the correct consistency). Reserve in the fridge.
  4. Meanwhile, season the sweet potato sticks with the olive oil, dried parsley and thyme, black pepper and salt.
  5. Add the garlic cloves and roast in the preheated oven at 180ºC, for 40 min.
  6. When the potatoes are getting tender, place the burger on the tray and roast for another 10 min.
  7. Serve the burger on top of the greens, along with the vegan mayo and the roasted sweet potato.
